Chicken and pesto focaccia (GF and DF)

I came across this gluten and grain free focaccia from Deeks Health foods and I had to make a chicken, salad and pesto sandwich. Learning how to make gluten free focaccia is on my to-do list but in the meantime, I’ll continue to eat this delicious Deeks focaccia.

This is a fantastic recipe to enjoy for lunch or dinner.

Chicken and pesto foccaccia

Ingredients

1 Deeks gluten free olive and herb focaccia

Β½ chicken breast

1 tablespoon mixed herbs and spices of your choice

1 tablespoon basil pesto

3 slices tomato

3 small cos lettuce leaves

Olive oil

 

Method

  1. Thinly slice the chicken and coat with herbs.

  2. In a frypan on medium heat, add the olive oil. Add the chicken and cook on both sides until it is fully cooked. Set aside to cool.

  3. Cut your focaccia into sandwich size and in half lengthwise.

  4. Add the pesto to the bottom of the sandwich, followed by the chicken, tomato, lettuce. Place the top of the focaccia on the sandwich.

  5. Enjoy!
